Acqua pazza (Crazy water)
 

Ingredients: (6 Pers.)

  • 1 kg Zerri-fishes (small fishes normally used for fried fish),
  • olive oil,
  • garlic,
  • chili pepper,
  • a hand fully of wild mint,
  • salt,
  • roasted slices of bread.


Preparation:

  • grind in a mortar 6 garlic toes
  • a hand fully of wild mint
  • and 1 chilli pepper;
  • give this mixture into a pot with cooking water
  • add 2 glasses of olive oil and some salt;
  • leave to cook for 10 minutes with large heat;
  • clean the fishes without removing the heads;
  • now add the fishes into the liquid
  • and let it cook for some minutes;
  • take attention that the fishes do not disintegrate;
  • now lay out a soup dish with roasted slices of bread
  • pour first the soup on it
  • than put the fishes on it and serve
